Baked Chicken Nuggets
Sherree tried a new recipe for chicken nuggets recently, and a few people asked about the recipe. Since I was e-mailing it anyway, I figured I might as well post it here, also. This is from The Taste of Home Cookbook, which we’re borrowing from the library.
Ingredients
- 1 cup dry breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 teaspoons dried basil
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 3/4 cup butter, melted
- 2-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
Directions
- In a shallow bowl, combine bread crumbs, cheese and seasonings. Dip chicken in melted butter, then roll in bread crumb mixture.
- Place chicken in a greased 15- x 10- x 1-inch baking pan. Bake, uncovered, at 400 degrees for 15-20 minutes or until juices run clear.
I think the salt can be left out depending upon how salty the parmesan you’re using is. Otherwise, it was pretty good.
