Alligator, Buffalo, and Ostrich Jerky

For Christmas my brother Chris gave me a selection of three jerkys: alligator, buffalo, and ostrich. I find the ostrich to be forgettable. The buffalo is a little less lean (not fatty, but less lean than beef; almost buttery) and sweet. The alligator, however, is quite special with good flavor and a very fine texture!
