Recipe #7 - Creamy Dijon Mustard Chicken

We eat a lot of chicken, and we like mustard, so I figured we may like this recipe when I saw it on Facebook.

This dinner had a typical outcome for us- both Dan and I liked it and disliked it for different reasons. I did not like all the shallots and didn’t think that they added much flavor to the dish. (To be fair, I also did not take chunks of shallots in my bites. I’m not a fan. I like smooth sauces.) Dan liked the shallots. I liked the mustard flavor, and Dan thought it was too strong.

I think that the recipe is worth making again. I made it with half dijon mustard and half whole grain. Maybe that measurement needs tweaking at some point to make both of us happy.
