Recipe #21 - Chicken Enchiladas

This is another printed recipe that I’ve had in my binder forever and finally made it- Chicken Enchiladas. We made them with flour tortillas because Dan prefers them. I really don’t like flour tortillas for enchiladas though because they get so soggy. But I guess I would also prefer saucy tacos over enchiladas.

This recipe also had too many things for my liking, but Dan liked them a lot. I would prefer just seasoned meat with cheese, while Dan likes all the veggie chunks that this recipe provides. Maybe next time we’ll try them with the corn tortillas and petite diced tomatoes.
