Recipe #43- Quinoa Pilaf with Herbs and Lemon
This recipe was printed in the Jan/Feb 2014 issue of Cook’s Illustrated. I’m always looking for new side dishes to get into the rotation throughout the week. We’ve tried this recipe twice. The first time I loved it, and the second time, it was ok but needed more. I wonder if I added extra lemon, butter, and salt last time, and that’s why I liked it. I also think that cooking the quinoa in stock rather than water would add a lot. Keeping this one to perfect it.
