Recipe #19 - Mexican Green Rice

I think Mexican Green Rice was another recipe featured on Facebook by Simply Recipes. I knew that Patrick wouldn’t eat it because it was green, but it interested me enough to try it.

I couldn’t really taste the parsley and cilantro, but the underlying heat of the pepper was yummy. We tried it a long time ago, but I don’t think that Dan liked it as much as I did. I have never thought about infusing flavor into the chicken stock before cooking the rice in it using a food processor. I may have to experiment with that technique on my own later.
